Ingredients
- 1 wholemeal slice bread, torn
- 1 small onion, peeled and roughly chopped
- 1 apple, cored and roughly chopped
- 1 tablespoon chopped fresh lemon thyme leaves
- 500g lean pork mince
- 2 teaspoons olive oil
- 4 tablespoons apple sauce
- 4 tablespoons low-fat plain yoghurt
- black pepper, to taste
Method
- Place the bread, shallot, apple and lemon thyme in a food processor and whizz until finely chopped. Mix with the pork mince and pepper, then shape into 28 small meatballs. Dampen your hands first so that the mixture doesn’t stick.
- Heat the olive oil in a large non-stick frying pan. Add the meatballs and fry for about 15 minutes over a medium heat until cooked through. Turn the meatballs now and then so they colour evenly. Mix the apple sauce and yoghurt together to make the sauce. Serve the sauce with the hot meatballs and carrot and swede mash.

Quarter of small swede peeled and dices
Method
Steam carrots and swede until tender and mash together.
