Egg Cheese & Spinach Muffins – A Perfect Quick and Easy Meal for you and your Little ones!
INGREDIENTS
- Eggs: high in protein and containing all 9 essential amino acids, eggs are an important part of your little ones diet. They are also a great source of iron which is essential for healthy growth and development.
- Spring Onions: loaded with essential nutrients like Vitamins A, C, B2, these are a great addition to help boost babies immune systems.
- Spinach: spinach is rich in both vitamin K and magnesium, both of which are very important nutrients for bone health.
- Tomatoes: jam packed with vitamin C and full of antioxidants, tomatoes are a great addition to any meal and provide heaps of essential nutrients for your little one
- Mozzarella: this cheese is a great source of probiotics, which are important for gut health and can help support the immune system!
METHOD
1-crack the eggs into a bowl along with the garlic powder and a little black pepper to season. Keep whisking until the texture is light and fluffy.
2-Once done, lightly oil a muffin tin and then fill each compartment 3/4 up with the egg mixture. Next, add about 1 tablespoon of spinach to each compartment and add a little sprinkle of spring onion and 1/2 a cherry tomato. To finish up, top with a little grated mozzarella. Make sure to use a spoon to mix the veggies through the egg gently!
3-Now, simply bake these in the oven for 25 minutes until the egg has fully set. The egg may rise and peak, but will settle back down after you’ve removed them from the oven and left them to cool.
Finally, serve these warm or cold & watch your little one enjoy!
